"Belollari's" superior category of olive is oil obtained by choice quality ripe "Taggiasca" olives that are pitted before the pressing which makes the quality of the oil more precious and desirable.
The organoleptic and qualitative characteristics or the oil is its yellow to yellow-green color a light fruity aroma and a delicate rounded fruity and mildly sweet taste with notes of pine nuts and almonds combined with a barely perceptible bitter and spicy sensation.
Produced only with olives of the prized Taggiasca variety in our family oil mill with a traditional stone system maintaining intact with all its properties, sweet and delicate flavour which are its main characteristic for complimenting the meal without covering the flavors of the dishes it seasons.
Precisely for this reason it is recommended by the best kitchens to season your fish dishes and is also perfect for newborns and children. The acidity is very low and the classic tingling in the throat is practically non-existent. The olives used to make this treasure of ours are harvested and processed the same day and pitted before pressing which makes our product extra special.
Each batch is selected both before and after pressing: first the olives are selected to recognize their quality visually and after pressing, when and accurate food analysis is carried out to verify that the characteristics of the newly produced oil fall within the parameters to be defined as Extra Virgin. The main characteristics that an Extra Virgin oil must have acidity below 0.8%, low number of peroxides, high presence of intact chlorophyll and finally all the organoleptic characteristics dictated by law. Only after passing all the checks can our oil be savoured in all its nuances of flavour.
Organic Taggiasca Extra Virgin Olive Oil is very rare because its cultivation can only be grown in the Ligurian hinterland at a height of 400-500 meters above sea level where the oil fly does not reach due to the temperature. For this reason, no treatments are carried out on the plant or the soil. Organic "Belollari" oil is particularly delicate, sweet and light and should be paired with fish and vegetable dishes. Good on bread and light first courses.

"Belollari" olive pâté is made with pitted olives and left to mature in brine. The olive paste is extracted and finally extra virgin olive oil, also produced by the farm, is added. This Taggiasca olive cream is perfect for spreading on bruschetta and crostini or for seasoning a first course of pasta or a cold pasta salad. We recommend a short format of pasta such as penne or fusilli.
