We are in Umbria, in Gualdo Cattaneo, an area highly suited to olive growing, and we have been producing the highest quality extra virgin olive oil from our olive groves since 1947. The olives are pressed in the family oil mill within 24 hours of harvesting, with cold extraction. The product is then bottled using the best proprietary machinery, guaranteeing maximum quality and freshness. We are proud custodians of a long family history, a heritage that we share with olive oil lovers from all over the world.
The climate of the Umbria region is considered continental, characterized by daytime and nighttime temperature variations. The territory of the municipality of Gualdo Cattaneo, geographically positioned in the center of the Umbria region, further accentuates this phenomenon, creating ideal conditions for the development of aromas and fragrances in the oil. Furthermore, this climate helps to discourage the proliferation of pathogens such as mold and insects, thus facilitating the practice of organic farming. This is highlighted by the presence of thousands of centuries-old plants on our owned lands, testimony to the health and vitality of our agricultural ecosystem. Our olive groves are spread over vast Umbrian hills, sheltered by the woods, and take on a natural position that goes from east to west, well exposed to sunlight from dawn to dusk, favoring a homogeneous ripening of the fruit. Furthermore, the distance of our olive groves from sources of humidity such as the sea and lakes is fundamental, since the olive tree is extremely sensitive to humidity and saltiness.
From a modest home production, Noemio had the vision to aim big, giving a significant turning point to the family business as he built a new building in Gualdo Cattaneo, equipped with a modern continuous cycle oil mill and expanded the land owned. This transformation, which occurred gradually over the years, has significantly improved the quality of the oil produced, always keeping alive the respect for the teachings of grandfather Noemio, who had the same name as him. In his honor, the company was named “Azienda Agraria Bacci Noemio”, a proud tribute to its roots.
In 1947, Noemio Bacci, inspired by this activity, gave the first entrepreneurial turn to the family agricultural business, going from a simple olive grower to an oil producer. After the Second World War Noemio had the desire to guarantee an agricultural future for his children which led him to purchase the oil mill from Count"Bennicelli" with two dear friends. This oil mill, located on the banks of the Puglia river, not far from "Gualdo Cattaneo", the family's town of origin, where the water of the river was used to power the stone mill. During those years, the mill, in addition to its own oil production, also became a point of reference for third-party processing by fellow villagers, who brought their olives to the mill to obtain their own oil in exchange.
We have been producing certified organic oil since 1996, supporting a healthy, ethically correct diet aimed at human well-being while respecting the environment. In our lands we use exclusively organic products and treatments for the cultivation and care of our olive trees, avoiding pesticides and chemical fertilizers. This approach promotes biodiversity, preserves the quality of the soil and guarantees a natural product on your table.

ORGANIC EXTRA VIRGIN OLIVE OIL
Its main characteristic are notes of fresh olive and almond with hints reminiscent of balsamic herbs and apple. On the palate it opens pleasant and herbaceous with balsamic notes, balanced in bitter and spicy notes with olive flavor and vegetable tones reminiscent of sweet artichoke, and closes harmoniously with floral and almond notes.​

This exquisite organic extra virgin olive oil mainly shows balsamic characters and with an olfactory finish rich in vegetable tones reminiscent of fresh olive fruit. In the mouth it is elegant and decisive, a clear tone of fresh olive and artichoke stands out. Medium the bitter and spicy sensations that leave a nice sensation of freshness long in evolution and persistence.
Bacci Noemio Monocultivar Moraiolo Extra Virgin Olive Oil
MONOCULTIVAR EXTRA VIRGIN OLIVE OIL
On the nose it has fruity notes of grass and artichoke, the enveloping taste expresses a great balance of slightly bitter notes with a spicy finish and a marked persistence. The medium but strong fruitiness, typical of this cultivar, gives an aromatic profile particularly rich in tones of fresh olive and balsamic herbs that is accompanied on the palate by notes of artichoke and arugula, very long and persistent. The bitter and spicy sensations are powerful but adequately dosed.
A unique variety, characteristic of our territory, the drupe stands out for being small and round. From these precious and limited olives an oil is extracted that differs from any other cultivar. It has a particularly bitter and spicy taste, thanks to the presence of its numerous polyphenols, but at the same time it is a balanced oil with aromas of artichoke, fresh grass, almond and olive leaves. The high concentration of polyphenols (antioxidants), which distinguishes the oil obtained from the Moraiolo cultivar, allows better preservation of the organoleptic properties over time compared to other oils obtained from different cultivars.
Variety known for developing thick and regular foliage, especially on the ends where the fruits grow. This cultivar, also called "evergreen", has a late maturation, ideal for the production of particularly fruity and stable oils over time. On the nose, the oil has a medium green fruitiness enriched with fragrant vegetal notes of green leaves. On the palate, it stands out for its delicacy, homogeneity and harmony, with pleasant hints of fresh grass and almond.
This variety is a vigorous plant that easily adapts to different olive-growing soils and stands out with a tidy and dense foliage. The ripening of the fruits is earlier than the other two previously mentioned varieties, with an evolution of flavors and aromas based on the harvest period. The oil produced by the Leccino Cultivar has a light fruitiness and releases herbaceous and almond fragrances. The flavor is balanced and delicate, with a pleasant aftertaste of almond and artichoke.
